A wet marinade is an emulsion consisting of lipid oils, culinary acids or enzymes (vinegar, citrus, yogurt), aromatics, and salt engineered to soften exterior muscle fibers.

Primary Mechanism Denatures tight muscle proteins on the surface through acidic or enzymatic action while carrying oil-soluble flavor compounds.
Penetration Depth Shallow exterior (1–3mm). Acid denatures outer proteins rapidly. Does not penetrate to the core of thick cuts.

Yes, but sequence is critical. The optimal method is the "2-Stage Hybrid Technique." You can either wet brine/marinade the cut first for 2 to 4 hours, thoroughly pat the exterior completely dry with paper towels to remove liquid moisture, and then apply an unsalted coarse dry rub right before cooking. Never apply a dry rub directly onto a wet, dripping surface, as the moisture will prevent bark development and steam the spices instead of roasting them.

Sucrose (table sugar) and standard brown sugars begin to caramelize around 320°F (160°C) and rapidly burn into black, bitter carbon soot at 350°F (177°C) and above. For this reason, sugar should be strictly omitted or capped below 5% for high-heat grilling (steaks, burgers). On low-and-slow barbecue cooks maintaining 225°F–250°F (such as pork ribs or pork shoulder), sugars safely caramelize without burning over 6–10 hours.

Multiple food science laboratory experiments have proven that organic molecules in marinades (oil, vinegar, crushed herbs, spices) penetrate only 1 to 3 millimeters into the muscle surface, even after 24 hours of soaking. Only small sodium chloride ions (salt) penetrate into the core through osmosis. Consequently, marinades are primarily surface treatments rather than internal flavoring agents.

Coarse kosher salt (especially Diamond Crystal or Morton Coarse) has larger, hollow or flaked grain structures. This makes it far easier to distribute evenly across meat without over-salting. Table salt consists of dense, small cubes that contain anti-caking agents and iodine, which can impart a harsh metallic note and lead to salt pockets. By weight, one tablespoon of table salt contains nearly twice the sodium of one tablespoon of Diamond Crystal kosher salt.
